What is the difference between top round roast and bottom round roast?
I would like to try my hand at making a different roast this year, (I already know how to do Tri-Tip), but I’d like to know which one of these roasts would be good. Years ago, we use to buy it at a butcher’s shop and they would roast it and slice it for us. I just remember it had a round shape and tasted very good. Also, if you can share your recipe, I’d appreciate it.

The technique is pretty much the same.
Make a few slits with a sharp knife, insert garlic cloves.
Sprinkle the fat cap with ground black pepper & sea-salt.
Place fat side up on rack in roast pan.
If no rack, use carrots & celery sticks to support roast.
Pre-heat oven to 350F then cook for 20 minutes per pound.
Better is to use meat thermometer for exact timing.
For last 10 minutes, turn heat up to 650F to sear.
Remove, cover with foil, let sit for 15 minutes.
This allows juices to re-absorb before cutting.
Collect fat & juices, discard carrots & celery sticks.
Mix a few tbsp of flour with fat to make a roux.
Whisk with juices, add vegetable stock to thin gravy.
